Summertime Foil-Pack Dinners

Summer is coming, which means that no matter where you live, it’s officially grilling season. In celebration of pool parties and potato chips, we’re sharing our favorite foil pack dinners that are perfect for hazy summer evenings and weekend backyard barbecues. The best part? No clean up required.

Creamy salsa verde, chicken, rice, and beans: Mexican food always, ALWAYS hits the spot. But when you pair it with a margarita (or several) in the summertime, it becomes a straight-up delicacy. This simple recipe comes packed with black beans, roasted corn, chicken, and a spicy salsa verde. Y-U-M.

Butter Garlic Herb Steak: Steak and potatoes have been served alongside one another for decades; and with good reason. This meat and potato staple is kicked up a notch with the addition of a garlic butter sauce that’s almost good enough to drink from a cup.

Grilled-Up Sweet Potato Casserole: This decadent sweet potato casserole is more of a dessert than it is a side. Sweet potatoes, brown sugar, pecans, marshmallows, and cinnamon make up this delicious entree. Since it only requires half an hour of your time from start to finish, you’ll make this recipe again and again.

Honey Mustard Salmon: Salmon is a notably healthy, versatile entree option that can be made in countless different ways. This honey-mustard based version isn’t exactly your run-of-the-mill lemon and herb staple. Instead, it features whole grain mustard, honey, and garlic for a unique twist.  

Campfire French Toast: This suuuuper guilty indulgence will make everyone in your inner circle a happy camper. Simply add butter and egg to tin-foil wrapped bread and let it roast on a campfire or grill for breakfast made easy.
