It’s that time of the year again where we start thinking about the Holidays. This means that sweets are on everyone’s mind, whether it’s baking them or eating them. I’m always looking for a delicious dessert recipe to bring to that family party or Holiday event. I wanted to create a recipe that was simple, healthy, and delicious! These ingredients you most likely have already in your house and will be able to make within minutes.

Coconut Flour Snickerdoodles

Ingredients:

1/2 cup of peanut butter
1/4 cup coconut flour
1 egg
1/4 cup honey
1 tsp cinnamon
1/2 tsp salt
1/2 tsp baking powder
(optional - add scoop of collagen peptides)
*sprinkle with coconut sugar + cinnamon mixture

Directions:

First, in a big mixing bowl, I put the peanut butter (or any nut butter you have) and combined it together with the honey until smooth.

Then, I added the egg along with the salt, cinnamon, coconut flour, and baking powder.

Then, I used a cookie scoop to portion out the dough and place onto a parchment-lined baking sheet. Combine the coconut sugar and cinnamon in a separate bowl and sprinkle mixture over each cookie.
Place cookies in the oven at 350 degrees for about 10-12 minutes. Take out when they’re still a little soft because they will harden a bit when cooling. Then, eat + enjoy!
